SIAL 2022 has established itself, one more time, as a privileged witness to developments in the agri-food industry. Leader Meeting was on site and gave, for its readers, a spotlight on the major food trends in this period of profound change.
The International Food Fair (Shit) 2022 was held in Paris from October 15 to 19, 2022. “International crossroads of food inspiration” according to the expression of its director, Nicolas Trentesaux, In each of its editions, SIAL marks the course of the global agri-food industry. This year there were nearly 7,200 exhibitors., representing 119 countries.
2,355 products were presented by 1,193 companies, and 801 products that were selected as innovations. SIAL Innovation offered an exceptional showcase of current and future food trends and innovations on the shelves and on our plates.. This 2022 selection is all the more exciting as, worldwide, players in the agri-food industry sector are innovating to meet new demands for change (71% of consumers have changed their habits in the last two years).
The main trends of the 2022 edition
Vegetarian and vegan substitutes and products represent almost a quarter of the products presented (24 %). Legume-based alternatives to meat — an already strong trend that SIAL revealed a long time ago since Triballat (became Olga) already presented its soy steaks at SIAL… 1998 — remain a very dynamic segment. More recently we have seen alternatives to seafood appear.. Emerging products more complex than simple substitutes, such as elaborate recipes or culinary aid products intended for vegetarians – statistically more numerous cook at home. Ultra-fresh dairy substitutes, the market, mature, sees the arrival of proposals based on less traditional ingredients, like spelled or hemp for example, but it is especially on the cheese substitute side that innovation is structured.
Pleasure as a key value
For 72% of consumers around the world, pleasure remains the driving force behind their food choices. No wonder, in these conditions, that the products presented whose main benefit (and sometimes unique) is the pleasure be many. Sometimes sophisticated products, premium on the one hand and others designed to do good. There is no doubt that the context of the Covid-19 crisis has boosted this consumption trend. We also note proposals for marked experiments, with products offering more sensations and intensity, both in texture and taste. In terms of flavors elsewhere, Korea and Africa seem to be the new sources of inspiration, with proposals that highlight naturalness and pronounced flavors or rising techniques on the gastronomic scene such as fermentation.
MAKE HOMEMADE EASIER
For 63% of consumers, food is a civic act.
Eat better, Today it’s often about cooking yourself. The Covid-19 period has accelerated this already old trend. With proposals that make it possible to do well more quickly or more easily. Culinary aids, preparation bases or kits that are widely available as vegetarian substitutes aim to satisfy this population more inclined to cook at home. Growing global inflation will also, inevitably, guide the new offer. We notice some innovations in this edition which, without being top prizes, highlight their affordable prices for as many people as possible.
