On the occasion of the 2026 French Burger Cup, organized on April 1st as part of the Snack Show, its organizer, Socopa Catering, meat supplier for professionals, wondered about the future of the burger. It unveils a prospective trend book positioning food as a veritable laboratory of mutations.
The “Burger of the Future” is the theme of the 2026 edition of the Coupe de France du Burger. To imagine this future, Socopa Restauration worked hand in hand with the NellyRodi firm to identify the transformations that are currently reshaping the world of the burger. According to the trend book carried out with the NellyRodi agency, five founding trends emerge, real horizons of the burger of tomorrow.

1 : The augmented burger : optimized nutrition
The augmented burger offers a new way of thinking about the burger : by redesigning its overall architecture to better combine indulgence and well-being. From bread to sauce to the right portion of meat or plant-based alternatives, each element is redesigned to reinforce both nutritional density, dietary diversity and taste pleasure. Here, well-being relies on a more thoughtful composition, where high-fiber flours improve satiety, techniques such as fermentation enrich the aromatic palette while supporting the microbiota, and plant ingredients or ancient grains provide depth, texture and variety.
