Winged Pods : the original taste of chocolate

Born of the passion of a young agricultural engineer Reunionese for cocoa, Les Cabosses Ailées tasting chocolates help us discover the true taste of chocolate. They can be found in all delicatessens in Reunion Island., wine cellars, as well as in the Hyper Leclerc in the local produce section.

The story of the Winged Pods, it is that of a young Reunion Islander who fell in love with cocoa. It all started in 2012, Richard Lauret, young 20 year old student, leaves Reunion to continue his studies in agronomy and food engineering in mainland France. The study of the cocoa sector taught at his Montpellier SupAgro school will be his first immersion in this world. It was during a six-month internship in Brazil, that he discovered for the first time the cocoa “fazenda” of Bahia in the Salvador Region. He develops a passion for these imposing berries, in multiple colors : rouge, orange, sometimes yellow and green, hanging from the trunks of cocoa trees. These are the Cabosses. This discovery will lead him on a crazy adventure through the world of cocoa and chocolate... Back in France, Richard specializes in post-agricultural cocoa processing. In 2015, he goes to work in Vietnam in a Bean-to-Bar factory. In his capacity as an agricultural and food engineer, it helps to improve the quality of marketable cocoa beans from farmers, he also works on improving the quality of tasting chocolate for export to the Japanese market. Back in 2016 in Reunion, Richard dreams of creating his own workshop which would allow all Reunion Islanders to discover bean-to-bar (“from bean to tablet”) : tasting artisanal chocolate made from the best cocoa beans in the world. Between 2016 and 2019, he travels the world in search of exceptional beans. He notably visits plantations in Indonesia, in Madagascar and Africa and is enriched with experience. And it was in 2020 that he decided to make this project a reality through the Cabosses Ailées, by setting itself the goal of producing the best tasting chocolates from each origin by combining Reunion know-how.

A healthy tasting chocolate
“In the meeting, industrial chocolates, high in sugar, are made from cocoa paste, with lots of butter, of preservatives, flavorings and additives. otherwise, in an industrial chocolate bar, when we announce 70% cocoa, Nowhere is the percentage of butter compared to cocoa powder indicated. But butter does not provide any flavor and is not very good for your health.. Among the Winged Pods, 70% cocoa corresponds to 70% of the best rare cocoa beans. There is no added cocoa butter or even flavoring or additives. These are tasting tablets which offer atypical and complex aromatic notes.” explains Richard Lauret.
Les Cabosses Ailées offers a range of 80% artisanal Reunion chocolates., 70% and 65% cocoa. A professional range (thick, block format cover, pistol format cover, Neapolitans) is available on request.
